I thought that Italian Seasoned Zucchini was Andy’s favorite. But I have recently roasted it in the oven, and it may just be his new favorite! This recipe is pretty similar and still quick, easy and delicious! My store find pan from Costco, helped to get the perfect roasted crunch!
Start by preheating the oven to 425. I cube the zucchini. Then toss it will EVOO, salt, white pepper, Italian seasoning and parmesan cheese. Next space it out in the pan evenly so they don’t touch. Roast in the oven for about 10-12 minutes and then enjoy!
Just as quick and delicious! As I said, this pan is awesome. I love it for chicken and roasting vegetables. I think next I will try slicing the zucchini and maybe try roasting potatoes in the pan! How do you roast zucchini? Any seasonings I should try next time!? I’d love to hear!
