Here is the last post of How many ways to use one Costco Rotisserie Chicken. In case you miss the other posts, let’s review: Chicken Alfredo Bake, Chicken Mushroom Wild Rice soup and the chicken wings were used as a dinner with rice and veggies. 3 ways so far and here is how I put the rest of the rotisserie chicken to use!
#4- Chicken Fried Rice: I chopped up 1 thigh, onions, peppers and garlic. I sautéed them with salt, white pepper, black pepper, adobo seasoning, paprika and Chinese five spice. I then added white rice and soy sauce. It was the perfect quick easy lunch plus leftovers for meal prep!



#5 – Chicken Bowls: I used the rest of the thigh and leg meat to make dinners for the week. The base of the bowls was a brown rice quinoa blend. I just cooked this in the rice cooker with some salt, pepper, onion, garlic powder and chili powder. Then in the air fryer, I roasted some sweet potatoes with EVOO, garlic, onion, salt, pepper and chili powder. In a pan, I sautéed the chopped chicken with poultry seasoning, salt, pepper and adobo seasoning. I combined all together for a delicious bowl. I topped with some fresh lime juice and cilantro. I also served with a side of herb dip. It was a great meal prep meal!
1 rotisserie chicken, made 5 different recipes/meals. It was enough food for lunch and dinners for a full week. All made different ways, so I wouldn’t get sick of it! It was fun to come up with new ideas. I think I will get another rotisserie chicken and see what other recipes and meals I can make! Any suggestions? Comment below!
