White Wine Seafood Linguini

Hey friends, still working on catching up on the last couple of months! So here is new recipe! As you know, we love to eat a good meal after a hard work out! Sometimes not always going out for a meal, but an easy and delicious meal we can make at home! That’s exactly what Hope and I did after a hard body combat class. On the Menu: white wine seafood linguini.

Here is what you need:
1lb. linguini
Seafood of choice
Garlic bread
For the sauce: 1 lemon, 5 garlic cloves, white wine (white wine vinegar), EVOO, parmesan and red pepper flakes

First step was to start the pasta. Then preheated the oven to bake some breaded calamari (from Wegman’s & highly recommend) and the garlic bread. In a nice wide sauce pan, I started the sauce. I sautéed the frozen shrimp in some oil, butter, salt, pepper and old bay seasoning. Then added the mussels in garlic butter sauce. I did not want to over cook them, so after several minutes I removed them from the pan and set them aside. Next, I dropped the pasta once the water was ready.

Once the oven was preheated, the calamari and garlic bread went in! Back in the sauce pan, I added more oil to the pan, minced garlic and some red pepper flakes. Once the garlic became fragrant, I added about 1/3 cup of white wine vinegar (because I wanted to drink the wine not cook with it LOL) and juice of one lemon. I had zested the lemon in a bowl and set aside before juicing it. As it began to simmer, I spooned in some pasta water and added butter. No real measurements here…just went off the eye of what I thought would work. Next, I added the shrimp and mussels back to the sauce, covered it for a few more minutes.

When the linguini was done, I added it to the sauce and then the lemon zest and parmesan cheese. Gave everything a stir and turn off the heat. Everything game together around the same time and made the perfect meal! I think this sauce is easy enough and definitely will be made again!!
