I love pasta in every way really. Sometimes I want to make it, but don’t know what kind. So I will look in the fridge and kitchen to see what I have and needs to be used. That is how this creamy tomato and spinach recipe came to life!
Here is what you need: 1 lb. pasta (I used linguini), half onion diced, 2 cloves of garlic minced, oil, 1 can of dice tomatoes (I used one with garlic and parsley), oregano, basil, dried red pepper flakes, tomato paste, salt, pepper, heavy cream, ricotta, parmesan cheese and fresh spinach! I also added some frozen meatballs for protein.
It was so easy to put together. First I started the pasta water. In a pan I started to sautéed the frozen meatballs for a few minutes. Then added the onions and garlic. After a few more minutes, I removed the meatballs and set aside as they were already cooked and I did not want them to overcook. Next, I added the diced tomatoes and tomato paste. I seasoned with salt pepper, oregano, basil and dried red pepper flakes. I rinsed my cans with some heavy cream/water and added it to the pan. I stirred until well combined and turned down the heat to a low simmer and continued to simmer.



I had some ricotta cheese that needed to be used, so I added a couple dollops of it and combined it into the sauce. I continued to let it simmer for a few more minutes. When the pasta water was ready I made the linguini! I then added the meatballs back to the sauce. When the pasta was almost down, I added the fresh spinach last to make sure it did not wilt.



I combined it all together and then we enjoyed! It was a quick and delicious meal that I would definitely make again. Do you have any favorite go-to quick pasta recipes? I’d love to hear them!
