Shout out to mom who picked up a couple sweet potatoes for me at a local farmers market! I decided to roast them as it is my favorite way!
First preheat the oven to 425. Wash and dice the sweet potatoes and place them in a bowl. This time around I added bacon grease, salt, black pepper, white pepper, garlic powder, onion powder, sage and brown sugar. I don’t measure just add a bit of everything and give them a good toss to make sure all are coated and seasoned.
I then place them in a glass baking dish, spreading them out so they are not on top of each other. I roaster them for about 20-25 minutes. They make the perfect side dish with chicken, a great base for a grain bowl or with eggs at breakfast!
