Fresh Peach Muffins

We had some dinner plans at a friend’s house and I was in charge of dessert. Not going to lie, I was tempted to just buy a dessert. I love eating it, but it really isn’t my favorite thing to cook or bake haha. My go to dessert would be something chocolate peanut butter, but I like to mix it up every now and then. So, I had to brainstorm and see what I could to make with ingredients I had. That is when I decided to use the peaches and I make muffins!!

The recipe I found was great! I cut the recipe below into half because I did not want 12 muffins. But it did end up making 9 with only have the recipe!

Ingredients:
  • 2 ¼ cup flour
  • 1 cup Sugar
  • 1tsp. baking powder
  • 1 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup oil
  • ½ cup milk
  • 2 eggs
  • 2 tsp. vanilla
  • 2 cups peaches
  • cinnamon sugar

It was a super easy recipe to follow! Start by preheating the oven to 400. I sprayed my silicone muffin molds and placed them in the muffin tin. In a bowl, I combined flour, sugar, baking powder, ground ginger, cinnamon and salt. In a separate bowl, I combined oil, milk, egg and vanilla. I slowly poured the wet ingredients into the dry while whisking them together. I did not want to over mix the batter.

Next, I gently folded in the peaches. I scooped the batter into the molds until they were about ¾ full. I sprinkled the top of each one with a cinnamon sugar. I baked them for about 17-20 minutes; until the tooth pick came out clean.

We ate them warm with some vanilla ice cream and they were the perfect and comforting dessert for a fall night! But they also made a delicious breakfast LOL. Do you have a favorite muffin recipe or flavor I should try? Comment below!
