Shrimp Rice Noodles

While on the Food Network app I came across Jet Tila’s Drunken Noodle recipe. I did not have all the ingredients but I made it work with what I had. I have to say they turned out pretty good too.

I started by making my sauce, mixing together 2 tbsp. soy sauce, 1 tbsp. oyster sauce, 1 ½ tbsp. fish sauce, 1 tbsp. sugar, 1 tsp. sirracha, and 1 tsp. minced garlic. I did not have Thai basil leaves, so I added some regular dried basil leaves. Next I made the rice noodes I had per the package. In a large pan, I heated oil on high heat. Once heated I added 2-3 cloves of minced garlic. Next I added the eggs to scramble for about one minute. I did not have serrano chiles so I added some red pepper flakes. I then added the shrimp and onions, sauting until the shrimp was pink. I did turn down the heat to medium. Lastly, I added the rice noodles, tomatoes and sauce. I mixed it all together and let it cook for another 1 minute or so. I made sure all the noodles were coated with sauce. Eat hot and enjoy!

I think next time I would like to use thicker rice noodles as Jet used. But overall it was delicious! I love rice noodles! I think we will try and make other rice noodle recipes in the near future! And they must have been so good – because I forgot to take pictures.
