Crispy Breakfast Potatoes

I have been dreaming about the breakfast potatoes from Lola’s since the day I have eaten them LOL. So I decided let’s try and recreate them. I must say, they were pretty close. Not as good, but still delicious. And I would definitely make them again – so I did something right!

Similar to the classic breakfast potatoes, I start by boiling the potatoes until they are fork tender. In a sauce pan I heated about 3-4 inches of oil on medium-high. When the potatoes were fork tender, I removed them from the water and let the cool/dry a bit. I think took a spoon and smashed them (not letting them completely fall apart). Next, I seasoned with them with salt, black pepper, white pepper, garlic powder, onion powder and paprika.

Once the oil was heated, I placed the smashed potato in the oil and let the fry until a golden crispy brown color. When they were finished, I removed them and salted them as they were cooling. Like I said, they turned out pretty good and pretty close to Lola’s potatoes. I mean to the eye they look the same don’t they? I don’t think I would do anything different next time. I think I just need a deep fryer because it would make it so much easier hahaha.
