Classic Breakfast

Is breakfast anyone else’s favorite meal?! Can you eat breakfast food at any time of day too? We can be best friends then. 😂 I love a good breakfast. (I know not surprising because I love food🤷🏽‍♀️), But I love eggs🥚, meat and potatoes 🥔 (in any form lol) as a good hearty meal! Our go to classic breakfast is eggs, potatoes and bacon! 🥓

I start with the potatoes. I learned the secret to the perfect breakfast potatoes from my best friend’s dad: boil the potatoes first, just as they get soft. Then take them out chop and fry them. It will gives you the perfect crisp but still soft on the inside!

Sometimes I will cut the potatoes in cubes, but Andy likes them sliced better. I use a cast iron pan for more of a crisp. I use oil and butter in pan for the perfect crunch and extra flavor. I let the potatoes sautée a bit then season with salt, pepper, garlic powder, onion powder and paprika. Once the potatoes start to brown, I begin cooking the breakfast meats. For this meal, I cooked ham and bacon. 🥓

My secret for quick easy bacon? I buy cooked bacon from Costco. Sometimes cooking a whole pack of bacon is too time consuming and too much. So I like to keep cook bacon on hand for breakfast, or sandwiches. A quick 30-60 seconds in the microwave or a quick pan fry gets a nice crispy piece of bacon! Typically I will start cooking the eggs last since they don’t take as long. I love my eggs gooey 🍳 but Andy prefers them scrambled hard. When we go out for breakfast, I order my eggs over easy. But I am always afraid that I will break them or over cook them, so sunny side up is my go to when I am cooking!

  1. Well I like my potatoes fried with onions and peppers. My eggs are usually sunny side up especially if I am eating loganisa which is a Philippine breakfast sausage. (My favorite). I love bacon too but usually cook the whole package and have leftovers. Of course you know that bc you eat it when you stop over lol
