Oven Baked Red Snapper

After browsing me two go to apps, The Foot Network App and Pinterest, here is how our oven baked red snapper came together. I think it turned out really good! (but always room for improvement lol)

I started by preheating the oven to 400 degrees. I dried the fish with a paper towel to remove excess water.  I cut slits into the fish on each side. Next I seasoned with salt and pepper on both sides and inside. I chopped some green onions and banana peppers as well as lemon slices (what I had in my kitchen LOL). I then stuffed the fish with all three and topped the fish with the rest.

I then baked the fish for about 30 minutes. With about 10-15 minutes remaining I roasted some zucchini with it as well. I wanted to make sure that I did not overcook or dry the fish out. Which was a success because it was still very juicy and flaky, but not dry at all. I forgot to finish the fish with a quick broil to crisp the skin, but really that is all that was missing. I will made a mental note to do that next time!
