As I have shared before, zucchini has become our favorite vegetable. I almost always make Italian seasoned but sometimes I will mix it up and fry it nice and crispy. Another way that my grandma would make it that I loved eating while growing up!
Its simple and easy to make – just the way I like cooking in the kitchen. You don’t need much and as always you can make it your own. You can slice the zucchini as chips or cut them like fries. This time I chose to cut them as fries.
I dust the zucchini fries in flour. Then I combined bread crumbs, panko, paprika, salt, pepper, oregano and garlic powder to create a breading. You can used seasoned bread crumbs if you want, but I like to season it myself. I heat my cast iron with about a half inch of oil. Lastly, I beat one egg. Then take the flour dusted zucchini and dip it in the egg and then in the breading mixture.
Once the oil has heated I place them in the pan and allow them to fry until they are a nice golden brown. Once they are down, a trick I learned from watching food network: I place the fried zucchini on a rack. This allows access oil to drip off, they keep their crunch and do not get soggy from sitting on a paper towel.
They can make the perfect appetizer or side dish to any meal. If you cut them in fry form – feel free to use your favorite dipping sauce! They went well with my cilantro lime dip!
