More Bagel Sandwich Prep

We are back with my two ingredient bagels. I know, I am obsessed! I switched to bread flour which is a game changer! It really elevates the bagel.  And I just can’t get enough of them!

For this sandwich prep, we did turkey bacon eggs and cheese! I started by making the bagels. While baking, I made the turkey bacon I the air fryer. It was quick and easy. About 10 minutes at 375 (flipping over halfway). I also prepped my eggs. I let everything cool completely before assembling. I find it easy to cut the bagel when they are not still hot/warm. They make great breakfast prep. I give them a quick 30 sec zap in the microwave and then pop them in the toaster oven for about 5 minutes at 350-400. If I ever do a double batch, I will freeze some, so I have the on hand whenever. My key to freezer is wrap them with a damp paper towel first, then wrap them in foil. When I take them out to reheat, I remove the foil and microwave about a minute to allow the damp paper towel to steam the sandwich back to life lol. Then I will pop it in the toaster oven for about 5 minutes at 350-400.

They are a great filling breakfast! My other favorite protein to use is the chicken breakfast sausages from Trader Joes. Maybe next time I will do fried bologna or pork roll – we shall see. Comment your suggestions below.
