Bagel Sammy Prep

I am a bit obsessed with the two ingredient bagels. They are easy to make, delicious and I find them to be a bit more filling. I decided, let’s make a bigger batch and prep some breakfast sammies.

They were super easy. I followed the same directions for the bagels. As they were baking, I prepped some eggs. Using my small frying pan that makes them in the perfect circle in the perfect size that fits right on the bagel. I like to crack the egg directly in the pan and the break the yoke for a yummy fried egg. I also add a slice of American cheese in the pan, to get the edges nice a crispy. In a separate pan, I crisped up some cooked bacon and pork roll.

After the bagels finished and cooled, I sliced them in half. Then added the egg and cheese and then one of the proteins. A kept a couple in the fridge for the week. I just quick microwaved it to warm it up and then finished it off in the toaster oven for a few minutes. The rest I decided to freeze. First I wrapped them in a wet paper towel and then in foil. I placed the sandwiches in a zip lock bag in the freezer. I forgot to label them, which wasn’t an issue. It ended up being a surprise, but I think next time I will label them. When I was ready to eat them, I took them out of the freezer. Unwrapped the foil and microwaved the sammy in the wet/frozen paper towel for about 30 seconds to a minute. If you took it out of the freezer and placed it in the fridge the night before then only 30 seconds was needed. If you took it out that morning, then closer to a minute is needed. The wet paper towel helps to steam and bring it back to life. I then remove the paper towel and place the sammy back in the foil and into the toaster oven to heat and crisp it up.

It was a delicious and filling breakfast. I want to try sausage patties next time or maybe crumbled sausage. I recently tried pepperoni with mozzarella cheese. It was another delicious combination, but bacon is still my favorite!
