Rice Cooker Chicken Bowl

I have tried soup in the rice cooker – but I would say soup tastes better and easier to make on the stove. This time around, I tried to do a rice bowl recipe in the rice cooker. It was easy, and despite just needing some more seasoning and flavor, I would do it again.

I added one cup jasmine rice and water to the rice cooker. I seasoned with some salt, pepper sesame oil and soy sauce. I then added chopped carrots, celery, mushrooms and Chinese sausage. I took 1 chicken thigh I cut into chunks and season it with some poultry seasoning, salt and pepper and then added that to the rice cooker. I cooked the rice as I normally would and out came the perfect meal that made 2-3 bowls.

It was a great packed lunch or left over dinner. As I mentioned, I need to add a bit more seasoning for taste and maybe even some Chinese five spice seasoning for more flavor! I may try to use brown or wild rice maybe even quinoa? If you have any other ideas for combinations to try next –comment below!
