When you have banana that are too ripe you need to find a recipe. So I decided to make some banana oat bites for breakfast!
Start by preheating the oven to 350 and spraying a mini muffin pan. In one bowl combine 3 cups rolled oats, 1 tsp. cinnamon, 1 tsp. baking powder and ¼ tsp. salt; then set aside. It another bowl smash 2-3 bananas (about 1 cup of mashed bananas). Then add two eggs and mixed together well. Add ¼ cup brown sugar, vanilla and 1 cup oat milk until smooth. Pour the wet ingredients into the dry ingredients until all is combined well. Lastly fold in chocolate chips. I added both chocolate chips and espresso chips.
Add the mixture to the mini muffin tin and bake for about 30 minutes. I removed from the oven and let them cook about 5 minutes in the pan and then removed them to cool completely on a cooling rack. They were the perfect bite size on the go breakfast!
