Ham and Potato Soup

Left over Christmas ham also brings a spiral ham bone. So why not make some ham soup! After searching Pinterest for a bit and what I had on hand, I pulled together a delicious ham and potato soup!

My ingredient list included: ham bones, onions, garlic, carrots, chicken broth, potatoes and ham. In my stock pot I added butter and oil and then sautéed the onions, garlic and carrots. I seasoned with salt, black pepper, white pepper and parsley. Next I added the ham bone, 2 cups of chicken broth and 1 cup of water. I covered and simmered for about 20 minutes. Then I added the chopped ham and potatoes and simmer for another 30 minutes. I removed the ham bone and removed any ham that did not fall off and back in the soup!

It became the perfect soup for cold days and the perfect meal prep for lunch during the week. Do you have a favorite ham soup recipe I should try next?
