Rice Paper Chips

Since my Arroz Caldo turned out better than expected I was looking for some crunchy topping options. One time I just added some seaweed strips, but then I had the idea of using rice paper! I used it two different ways.

First, I heated oil in a pan. I broke pieces of the rice paper and fried them in the heated oil. It only takes a few seconds for them to harden and become chips. Lightly salt them once you remove the, from the oil.

Second way, I dipped the pieces of rice paper in water to soften. I then stuck it on a piece of seaweed and placed them on a paper towel to absorb the excess water. I place it in the hot oil and again in a few seconds it was the perfect crunchy chip. I did not need to salt this version as the seaweed provided the perfect salt balance.

As I said, I put this on top of my Arroz Caldo but I also just made them for a yummy snack! I typically only use rice paper for spring rolls but I am looking for new ways to use it. This was the perfect snack. Do you have a way I should use rice paper next? Let me know and comment below!
