Pulled Pork Tacos

Mexican food is one of my favorites and I love a good taco night! I decided we would do a pulled pork taco night, because it quick and easy when you use the crock pot!

I bought this hunk of pork shoulder from Aldi’s, and its great already seasoned. I added about ¼ cup of water to the bottom of the crock pot and then place the pork inside. I added a bit more BBQ sauce and then turned it on high for about 4 hours. I then used my hand mixer to pull apart the pork. I like to add water before cooking so the pork doesn’t stick to the bottom and creates a good broth/juice for the pulled pork to sit in.

All that was left to do was to get the topping in order. I had cut slaw for added crunch, salsa, sour cream and cheese. Then also made some gauc. I just used dry cut cabbage for the slaw since the pork was so juicy I did not want a really runny taco. Everything paired together so well and it was a great taco night with some homemade tortilla chips as well!

I think next taco night I will make baja shrimp tacos. What is your favorite kind of taco??
