My attempt of a beef and broccoli stir fry for lunches, didn’t turn out how I totally anticipated. However, it was still yummy enough to share the recipe with you all!😂 As always, I looked to the Food Network app for some inspiration and then compiled what I had in my kitchen. Here is how it all came together.
I start by chopping one head of broccoli, 3 cloves of garlic and half an onion. I also decided to add about 1-2 cups of frozen edamame. Next I mix a sauce using 1/4 cup each of white wine, orange juice, soy sauce and water, 2 tbsp. of rice vinegar and 1/4 tsp. of red pepper flakes. Then I cut my beef into small chunks and seasoned with some salt and pepper. Heat a pan with oil and cook the beef for about 5 minutes, until just browned. Then remove from the pan and set aside. Reheat oil in the pan and add the veggies and garlic; cook for about 2-3 minutes, until they begin to soften.
I poured the sauce and add the beef back in and continue to simmer the stir fry. I dissolved 1 1/2 tsp. of corn starch in 1/4 cup of water. I poured the mixture in and continued to simmer to thicken the sauce. My sauce did not thicken as much as I wanted. But it was still delicious! Served with white rice it was the perfect meal prep lunch!

Yes I have made this and every time it is a little different. Like you I change up the spice lol. I usually find if it isn’t thick enough it is because there was more sauce than I thought and I didn’t have enough cornstarch lol. Looks delicious
