Baked Tipalia

Tilapia is my go to quick fish to cook. I have already shared my pan fried tilapia recipe. But here is my baked tilapia recipe! This one came together after searching Pinterest and the Food Network Kitchen App. A combination of several recipes with my own twist of the ingredients that I had and this came all together!

I started by preheating the oven to 450. I chopped celery, carrots and green onion to cover the the bottom of a glass pan. I then added thinly sliced lemons on top of the vegetables.

Next, I took about 3-4 tbsp. of soften butter and mixed in some chopped cilantro, thyme and dill. I think added dollops of the herb butter on top of the lemon slices throughout the pan. I salt and peppered the tilapia filets and then placed them on top of the butter.

At last minute I decided to slice a few cherry tomatoes and added them to the pan around the filets. I covered the pan in foil and the baked everything for about 25-30 minutes I then took out the pan and let it sit about 5 minutes. Once we were ready to eat, I took the filet and placed it on the plate. I then took a lemon slice to place on top of the filet. Then added the cooked vegetables and butter/sauce from the pan on top as well!

We had our tilapia with some jasmine rice and it was a great combination! The fish was very tender and flavorful! The herb butter on top gave it another level of taste. I think next time I will try different herbs and different vegetables to mix it up! If you have any other ideas or combinations you think I should try, then comment below!
