Creamy Truffle Pasta with Beef Bites

I had some beef stew pieces in the freezer and I was in the mood for a creamy pasta with beef and mushrooms (one that wasn’t stroganoff). This is how I threw this quick and easy dinner together.

For the beef chunks, I wanted to do them in the air fryer. I seasoned them with salt, pepper, Cajun, garlic and onion powder. I then air fried them at 375 for about 12-15minutes. I did give them a shake midway through to make sure they were cooked evenly. While they were in the air fryer, I sauteed some mushrooms with salt, pepper, and a littler bit of truffle oil. To them, I added the creamy truffle pasta sauce I found at Trade Joes. I let this all simmer together. The noodle selection was a bucatini spiral pasta that made for a fun bite! They were great in having pockets of sauce and flavor throughout.

Once all the ingredients were ready, I topped the pasta with the truffle mushroom sauce and beef bites. Then of course topped that with some freshly grated parmesan. It was the perfect finish. It was an easy, quick weekend night dinner that was delicious.  I will look to do more easy recipes like this in the future – comment your suggestion below!
