I love a good fish and chips, especially with malt vinegar and a beer LOL. After finding fresh caught cod at Costco – a quick easy fish and chips meal was created.
I say quick and easy, because I used frozen steak fries, that were heated in the air fryer and store-bought coleslaw to complete the meal. That meant, all the prep was for the fish. It was the hardest part, because I didn’t realize I bought the filets with the skin on. So, the most work of the meal was removing the skin and getting the fish prepped. After several different ideas of what batter and how to cook it – I landed on a tempura batter and deep frying it in a cast iron.
The batter mix I found at Aldi’s and all it needed was to be mixed with water. First, I added salt, black pepper, white pepper and a creole seasoning to the dry mix. Once my oil was heated to about 350, then I combined the dry mix with cold water. I dipped my fish pieces and placed in the oil. It only took about a minute or 2 on each side before they were perfectly crisped and ready to be served. The key to keeping the fish crispy, is to cool on a wire rack, not on a paper towel. This allows the air to circulate and not sit in a soggy oil covered paper towel. It was a delicious meal that was very easy to through together. But now it made me want a complete tempura dinner – so that may be in the future!
