Last time I made elote, I had leftovers. I decided to cut them off the cob and then enjoy them with tortilla chips. It was such a great idea, that I was like, “I need to do a hot elote dip for game day” – here it is!
I had fresh corn, so I started by cutting that off the cob. I sauteed it a bit with some butter, salt, pepper and chili powder. I then removed from heat and mixed in half a block of cream cheese, equal parts sour cream and mayo. I seasoned with Elote seasoning, garlic powder, chili powder, salt, and pepper. Then I added juice from 1 lime, fresh cilantro, and cotija cheese. I mixed until well combined, placed in a baking dish and topped with more cotija cheese. Once I was ready to prep for game time, I preheated the oven to 375 and baked about 20-30 minutes, until it was bubbling and crispy around the edges. I had Frito scoops which were the perfect vessel for this delicious dip. Next time, I want to have this dip on a taco night to really complete the menu! Comment your favorite game day dips below!
