Sheet Pan Butter Herb Chicken

Sometimes you need easy and delicious meals, especially the sheet pan meals – here’s one I tried recently.

I preheated the oven to 400. Salt and peppered 3 chicken breasts and placed on a lightly greased sheet pan. I rough chopped some baby potatoes and placed then around the chicken breast. Next, I prepped my butter herb sauce by combining about 1/3 cup chicken broth, ¼ cup melted butter, minced garlic, fresh parsley, dried thyme, dried rosemary, salt and pepper.  I tossed the chicken and potatoes in the butter sauce, reserving about ½ cup of the sauce. I placed in the oven for about 15 minutes. While this was in the oven, I prepped some green beans by trimming the ends and then tossing them in the remainder of the butter sauce. When the 15 minutes was up, I took out the sheet pan, flipped the chicken breast and added the green beans to the pan. I also moved around the potatoes before popping the pan bake in the oven for about 10 minutes. I then finished with a broil for 2-3 minutes until the potatoes were nice and crispy.

Overall, it was a quick, easy meal to throw together. It also made for a great meal prep meal. I think I may look to more sheet pan meals. If you have ideas – comment below!
