Cottage Cheese Pasta Sauce

We’re back at trying the cottage cheese recipes for the sneaky extra protein. This time in pasta sauce. Now I will tell you the consistency didn’t turn out how I wanted, but the taste we were right on point! So overall I would give it a 7.5/10 with room for improvement.

I started by chopping some onions and garlic and sautéing them in a pan. Then I added 1 can diced tomatoes (basil & garlic). I allowed that to simmer for a bit and added some salt, pepper (white and black) and Italian seasoning. As that simmered I chopped some baby zucchinis to add some veggies to the sauce. I took about 1 cup of cottage cheese and blended it until smooth. I then added this to my tomato sauce. I continued to let it simmer as I made some Italian sausage raviolis. The sauce consistency was a bit grainy, not as smooth as I had hoped. But it did taste pretty good. It gave the creamy pasta sauce vibe, but I also felt like it was filling and not as heavy as some cream sauces can be. I am not giving up on the cottage cheese in pasta sauce – so I will try this again and see what I do differently. Have you tried this before or have any recommendations? Comment below!
