Every in the mood for coffee cake but want an easy recipe? Then this on is for you!
Ingredients: 2 1/3 cups bisquick mix, 2 Tbsp. sugar, 2/3 cup milk, 1 egg, 1 tsp. vanilla, 1/3 cup brown sugar, 1 tsp. cinnamon and 2 tbsp. cold butter.
Preheat the oven to 375 and grease a baking pan. There were two batches made, one with a deep pie dish and another with a rectangle baking dish. Both turned out but the rectangle baking dish was better!
In a mixing bowl combine 2 cups bisquick with sugar. Then add the milk, egg and vanilla. Mix until combined well. Add this mixture to the greased baking dish. Then in another bowl create the topping by combining 1/3 cup bisquick, brown sugar and cinnamon. Then add the cold butter and mash together to create small crumbs. Sprinkle on top of the cake. I ran out of topping for the rectangle pan, so I sprinkle more brown sugar on top! Bake for about 18-20 minutes, or until the toothpick came out clean. Eat warm with your cup of coffee and it was the perfect breakfast combo!
