Our last grilled corn recipe was super easy and delicious!
Along with the grilled corn, we had dad grill zucchini pieces. Then cute the corn off the cob and top a bed of kale with the corn and zucchini. Drizzle EVOO, lemon juice, salt and pepper all over and mix until everything is coated. Lastly, when serving top with grated parmesan cheese (I like to do a lot to have the kale with a great cheesy coating). We meant to add some goat cheese, but forgot. So next time, we will use goat cheese instead of parmesan.
