I have been seeing this trend going around so I had to try it. It was easy to make, delicious and addicting to eat. AKA I would make it again and again and again!



I took some of the plain bigger rice cakes and spread peanut butter on the tops of them all. Then I took some chocolate chips and espresso chips and melted them in a bowl in the microwave. I then dipped each rice cake in the chocolate, peanut butter side down. I spread out all rice cakes on plate and refrigerated them. Once they set, I put them all in a container, but kept them in the fridge so they wouldn’t melt in the summer heat! They were the perfect snack and “healthier” peanut butter cup option!



Next time around, I think I want to get the mini cakes for more of a bite size option. I may look to try different flavor of rice cakes and/or different chip flavors to melt!? Let me know if you have any ideas or suggestions of what I should try next – comment below!

I think mini ones would be fun. Maybe even put fluff or Nutella. These were good.
