Avocado Bacon Pasta Salad

Yesterday was national avocado day. So here’s a new recipe for you to try!

I love pasta salad, especially in the summer time. I decided to try to throw together a new recipe of what was in my kitchen to try something new.

I started by prepping pasta water, I used mini bow ties. Next I chopped up some mini peppers, tomatoes and cucumbers, adding them all to a bowl. I took one can of chick peas, drained and rinsed before adding them to the bowl. Lastly, I crisped up 6 pieces of precooked bacon (something I also love to keep on hand), chopped finely and added to the bowl.

As the pasta finished cooking, I decided to make my own dressing. I added two mini servings of smashed avocado, chopped cilantro, EVOO, 1 lime, juiced, avocado oil mayo, garlic powder, onion powder, black pepper, salt and dill to a measure cup. I mixed everything together to make a dressing. It was a bit on the thicker side, so I added a bit more EVOO.

When the pasta was done, I added to the bowl to the rest of the ingredients, poured the dressing on top and mixed everything together. I topped with a pit of grated asiago cheese and enjoyed! As I was eating, I realized that I meant to add red onion LOL. Honestly, it was really missing it too! But of course I had all dished cleaned up and wasn’t about to add more haha.

    My favorite is one that has screwdriver pasta, onions, peppers, cheese, salami, salt, pepper, olive oil and garlic 🙂
