Skillet Fudge Brownie

Hi friends – I know I am so behind on sharing recipes and reviews, but don’t worry we have more! We have plenty of content, but I just need to sit down and get all together to share with you! LOL I also will have more video content to share too – so stay tuned!! (and patient haha)

When you are snowed in, a warm dessert is a great way to end the day. Our last snow, I decided to try a fudge brownie but in a skillet! After browsing Pinterest, here is how my recipe came together!

I started by preheating the oven to 350. I sprayed my 6in cast iron skillet with cooking spray. I placed the skillet on a baking sheet to make sure it doesn’t overflow in my oven – always be prepared hahaha.In a bowl, I sifted and added 1/3 cup flour, 2 tbsp. of cocoa powder, ¾ tsp baking powder and some salt. I whisked all ingredients together. I then stirred in ¼ cup oat milk, 4 tbsp. sugar, 1 ½ tbsp. melted butter and ½ tsp vanilla. Once it was all combined, I poured it into the skillet. and topped with some chocolate chips!

Next was prepping the fudge portion. In a small bowl I combined 2 tbsp. cocoa powder, 3 tbsp. sugar and 4tbsp. brown sugar. Then I sprinkled it all over the batter, covering the skillet. Last I poured ½ cup hot water over everything filling the skillet completely. (do not mix the water in) I baked the skillet for about 25-30 minutes checking with a tooth pick. It will be a bit gooey and fudgy. Allow the skillet to cool a bit, and then dig in! I of had to add some ice cream. Leftovers were great heated in the microwave and topped with fresh berries!
