I love cucumbers! But always on the hunt for new ways to enjoy them. While scrolling social media, I stumbled upon this recipe. So I thought I would give it a try and I must say, I will make this again!
Start by peeling the cucumber and then slicing it into chips. I placed the cucumbers in a glass container, with a splash of apple cider vinegar, salt, pepper and dill. I let it refrigerate overnight and they were a delicious snack! They also became the perfect side dish. I ate some with my whipped feta toast and alongside mushroom soup! They were like the healthy version of salt and vinegar chips (but sometimes we still need the potatoes LOL).
