I was given some fresh produce from a co-workers garden and jalapeños were in the mix. I am not a huge spicy person, but thought this was the perfect time to try a bacon wrapped jalapeño popper. Again, who doesn’t enjoy something wrapped in bacon?!? With ingredients I had at home, here is how they came together!
I started by preheating the oven at 400. Then sliced the jalapeños in half and removing all the seeds. I took about 1-2 oz. of soften cream cheese in a bowl and mixed cheddar cheese and mozzarella, about ¼ cup of bread crumbs, chopped garlic and chopped green onion. I continued to stir until it was all well combined. Once it was combined I stuffed each half of jalapeño and then wrapped each one in bacon. When the oven was preheated, I popped them in and baked them for about 30-40 min, until the bacon was brown and crispy!
A few were a bit too spicy for me, but overall they turned out delicious and would definitely make them again. Maybe next time I will deep fry them, like true poppers. Do you have a jalapeno popper recipe to share? Comment below!
