As I have been saying, I want to try and roast potatoes in my cooper pan … and I finally did it. They were BOMB and I cannot wait to make them again.
I started by preheating the oven to 425. I cubed the potatoes and then tossed them with EVOO, salt, pepper, garlic powder, chili powder, onion powder and parsley. I then place them on the pan and try to spread them out as much as possible so they are not touching. When the oven was ready heated, I put them in for about 20-25 minutes until they are golden brown.
They came out crispy but nice and soft on the inside. I would keep them in a bit longer if they aren’t fork tender enough. I would also still recommend this pan, because it cooks everything to the perfect crispiness!
How do you like to roast your potatoes? I think next time I will try different seasonings!

I usually use a glass pan. Oil salt and pepper garlic and parsley or Italian seasoning.
