Trying to mix things up a bit and decided to cook BBQ chicken thighs. This time in a cast iron and oven! This recipe was super easy, and you probably have almost all, if not all the ingredients in your kitchen!
I started by preheating the oven to 450. In a bowl I mixed BBQ sauce, hot sauce, mustard and a small dash of honey mustard. I didn’t measure them; just dumped them into a bowl. Mixed them and tasted it to see what more I needed to add. Next I added salt, pepper and a bit of adobo seasoning to the chicken thighs. I heated the cast iron with oil and butter. When it was hot, I placed the thighs skin side down and let them crisp. I brushed the other side with the BBQ sauce mixture.
After several minutes, I flipped the thighs and added bbq sauce to the skin side. After several more minutes, I put the entire cast iron in the heated oven for about 30 minutes. (Make sure you turn off your stove top when you move the cast iron to t he oven. Because I forgot and almost burned myself π)
After 30 minutes, I pulled out the cast iron and let the chicken rest in the pan another 5-10 minutes before eating and serving. This was a quick and simple chicken recipe. We served this with some green beans and rice! Do you have a favorite BBQ chicken recipe I should try? Comment below!

Yum. Love BBQ chicken. I donβt usually use bbq sauce. I use salt, pepper and vinegar/oil mixture. π
