Where are the party people?! Specifically the party people that enjoy the food/that go for the food? π I love a good party, specially when there is good food involved! I love making party foods or appetizers. Mac and cheese bites are a great and yummy go-to party food!
For this occasion, I decided to make bacon mac and cheese. First, I the pasta water. Then take a few pieces of cooked bacon and chopped them (see cook bacon is handy lol). I let it crisp in a separate pot and then removed it. Any excess bacon grease I left in the pot to add extra flavor to the roux! To start the roux, I added 5 tablespoons of butter to the pot and let it melt over medium heat. I then added 5 tablespoons of flour and combined.
When the pasta water was ready, I added 2 cups of macaroni and preheated the oven to 425. As the butter and flour started to thicken, I added 1 cup of milk (I used whole milk) and stirred until combined. The roux will begin to form and thicken some more. I seasoned it with salt, white pepper and ground mustard, continually stirring it until combined.
Next is the best part – the cheeseπ§.
I typically use whatever cheese I have on hand. Just like chocolate chips – I do not measure cheese. I just add cheese until I think it is enough, then add a bit more. π
For this recipe I used monetary jack, sharp cheddar and mozzarella cheese. I added all 3 cheeses to the roux and stirred until the cheese was melted and combined.Once it was smooth and the macaroni was just under from being cooked, I added the macaroni to the cheese sauce and stirred. If the cheese sauce is too thick, then I added some pasta water. I add the crisp bacon next and mix it into the mac.
I greased the mini muffin pan and then evenly distributed the mac and cheese in the pan. I placed in the preheated oven and baked them for about 15-20 minutes.
You want the edges to start to brown and crisp. If you like darker/crunchier mac then keep them in the oven longer. I was on a time crunch and had to take them out, but I love a good crunchy mac. Once you remove the pan from the oven, let the bites sit in the pan for about 5 minutes before removable. This will help them from falling apart too easily.
