Roasted Pork

I was really in the mood for a good cheesy baked mac and cheese. I needed a protein and decided that I would roast some of the pork shoulder pieces I had in the freezer.

I did let the chunk thaw. When ready, I preheated the oven to 325. I combined: 2 tsp salt, 1 ½ tsp pepper, 1 tsp garlic powder, 1 tsp fresh garlic, 2 tsp paprika, and 1 tsp onion powder in a bowl. I lightly drizzled EVOO on the pork and used the combined seasonings to cover the pork as a rub. I placed the pork in my small roasting pan (shout out grandma for this fun addition!) covered with the lid and placed in the over for about 3.5 hours. The smells were amazing throughout the house on this snow day. Once I checked on it, I bumped the oven to 425 removed the lid and allowed it to crips on the outside. This was when I baked the mac and cheese as well.

Both finished up at the same time and were ready to serve together. It was the perfect snow day dinner. The leftovers were delicious all week! I think this would be another recipe to keep in rotation. Though, next time I think I will try more of a BBQ rub/seasoning!
