We are back with our breakfast meal preps! I wanted to egg bites, with tater tots this time!
First, I preheated the oven to 375. I lined my muffin tin with my silicone liners that I sprayed with avocado oil. I placed about 3 frozen tots in each mold and popped them in the oven for about 5-8 minutes. I then removed the and took a shot glass to press them down into the bowl of the mold, creating a bit of a cup. I added a bit of salt and pepper and popped them back in the oven for another 10-15 minutes so they could crisp up some more.
I quick defrosted and chopped chicken sausage links from Costco in a pan. I need to use more next time, as I only had enough for about 2-3 chunks for each muffin. I then combined 3-5 eggs and about ½-1 cup of egg whites. I pulled out the tots and topped each with some white cheddar cheese, sausage chunks, the egg mixture and then topped with more cheese. I baked them for about 20 minutes, until they start to get a nice golden color. Overall, they were delicious, light yet filling breakfast. I liked to have 2 with some Truffle hot sauce. I think will try some turkey bacon and veggies next time!
