Chicken Sausage Pasta Bake

Colder weather means we’re back to the pasta bakes. They are easy, delicious, and so comforting when it is cold outside! This time around we did a chicken sausage with rotini pasta!

I love recipes like these where you can just dump and let the magic happen. I preheated the oven to 375 and greased a glass baking dish. I added 1lb. rotini pasta, 16oz. garlic marinara sauce, 2 cups chicken broth, minced garlic, 16oz. chicken sausage, sliced and some frozen spinach. I mixed all until combined and then seasoned with some salt, pepper, Italian seasoning, and some red pepper flakes. In the center, I added a garlic herb Boursin cheese block. I covered and baked for about 30 minutes. The Boursin cheese was nice and soft, and I mixed everything together. I topped with some shredded mozzarella and then baked uncovered for about 10-15 more minutes until the cheese was nice and melted over the top.

This was a great dinner and meal prep lunch for the week. It was a comforting and filling meal. Pasta is good for the tummy and the soul! I think I will try a new variety of pasta and protein next time; the options can be endless!
