Chinese Pork BBQ and Veggies

Friday nights are nights my favorite to order Chinese take-out. Sometimes by the end of the week you do not have anymore leftovers, or you are over the leftovers you have and you just want something comforting and easy. Most of the time you don’t want to put forth the effort to cook it LOL. So, I thought I would try and make my own takeout. It was easy and fairly quick. But the clean up I was not into, and I rather do take out or door dash from here on out! LOL but hey, I did try!

First, I took boneless pork ribs seasoned them with some salt pepper and minced garlic. Then allowed them to marinate in a Chinese BBQ sauce over night. When I came home from work, I took the pork out and started my white rice in the rice cooker. I decided to air fryer the pork. I air fried them at 400 for 10 minutes. Then I flipped them over and continued for another 20 minutes at 350. The last item to complete the meal was some homemade Chinese vegetables.  I had a Chinese blend in the freezer from Costco (a fun medley to have on hand). I started by making a slurry with about ½ to ¾ cup chicken broth and 3 ½ cornstarch and set it aside. In my large pan on low heat, I added about 2 ½ to 3 cups chicken broth, 1 tbsp. rice wine vinegar, 1 tbsp sesame oil, 2-4 tbsp minced garlic, minced ginger and some salt and pepper. I allowed it to come to a simmer and combine, before adding my veggies in. Once all was combined, I added the slurry to thicken the sauce. I gave it a taste and felt like it was missing something, so I added some fish sauce, soy sauce and white pepper.  I may have tampered with it too much because it was a bit of a sour veggie rather than the Chinese veggie I was going for, but it was still yummy. I sliced the pork, and it was a delicious Chinese pork. It just wasn’t as tender I as I hoped they would be.

Overall, it came together nicely. But it was more work than I wanted on a Friday night and I could have done without the clean-up. It also didn’t seem to be as good as take out tends to be lol. Maybe next time I will venture to do a different Chinese meal, perhaps some pork belly? We shall see, take out may win!
