Noodle Salad

The golden cherry tomato plant was thriving this season! So, it was time for another way to use them when packing lunch. Pasta salad came to mind, but with more of a noodle. The selection this time was angel hair.

As the pasta as cooking, I chopped up the gold tomatoes, cucumbers, a red sweet pepper and a purple onion. It made for a beautiful rainbow dish. When the noodles were done, I threw together a quick dressing using EVOO, a splash of white wine vinegar, Italian seasoning, salt and better. I made sure to just do enough for a light coating. I didn’t want it to be heavily dressed that you couldn’t taste the freshness of the veggies. Before eating I topped with some freshly grated parmesan. It worked out perfectly and made for a great packed lunch! I love these easy, yet delicious lunches.
