Costco Chicken

We are back with more recipes and ways to use a Costco chicken. I love to make most of that $5 investment LOL. First thing I do is remove all the meat from the carcass and get a simple bone broth started. I used the chicken and broth multiple ways this time!

1. First way was using the chicken breast on top of salad for lunch. I was still in the tail end of the fresh produce from garden and farmer’s markets so, a salad for lunch is the way to go! I think the rotisserie chicken pairs perfectly and makes for a great lunch to pack for work! So much so that I used it for 4 plus salads!

2. So I didn’t get bored of sick of salads, I decided to make and pack some chicken wraps. I also had left over bacon from weekend breakfast, so why not some chicken bacon ranch wraps! Super easy to throw together and also very delicious! In a bowl, I added chopped onions, chopped bacon, shredded chicken, shredded cheddar cheese and ranch dressing (measuring all with my heart lol). Once mixed well, I placed a piece of lettuce on a wrap and placed the chicken mixture in the lettuce and wrapped everything up in the tortilla. It was the perfect lunch paired with Cheetos! It was easy to make, that then made me think, may try this same mixture, but on a salad or quesadilla next time. The options could be endless!

3. My bone broth was pretty basic. But I used it for other recipes. First was a little pasta meal. Instead of cooking my pasta in water, I used the broth to add more flavor and protein! The key was to put enough broth to make sure the pasta fully cooked (I didn’t at first and had to add more lol). Once the broth dissolved and the noodles were al dente, I added a big handful of fresh spinach, and some of the rotisserie chicken. Once the spinach wilted, I added a splash of EVOO and fresh grated parmesan. I turned off the heat and let the ingredients all combine. It was a quick, easy and comforting dinner. I would definitely make it again and mix up the ingredients. But it also has me thinking, how many pasta dishes can I use broth instead of water… that will be for a later post I am sure LOL.

4. My last way I used the chicken and the broth was… you guessed it, Arroz Caldo Soup. It is my go to soup as it is so comforting, delicious, easy to make, and great lunch for those cool, chilly days!
