I needed an easy, but yummy lunch. After getting lost in reels a seeing a variety of ideas, I decided to use canned tuna. A simple ingredient that you can really level up!
In a bowl, I combined 1 can of tuna, some shelled edamame, chopped carrots, chopped cucumbers, kewpie mayo, sriracha, chili onion crisp, and some Japanese BBQ sauce. I seasoned with some salt, pepper, and garlic powdered. I tasted and added the a bit more kewpie mayo and sriracha. I then topped with fresh scallions and furikake. I had a bit of left over rice that I packed as well. I enjoyed it all with seaweed pieces. They were yummy bites that made for a fun Asian inspired lunch. It made for a large amount of tuna salad. The leftovers I decided to enjoy with some rice paper seaweed chips that I decided to throw together for a fund and crunch bite!
