Apple Oat Muffins

Meal prepping breakfast options, especially those that pair well with coffee. I love the protein blueberry muffins that use Greek yogurt and the kodiak pancake mix. I have made them several more times mixing strawberries or whatever berry I had on hand. But this time around, I had apples to use and I wanted to incorporate oats. So here is how they came together!

First, I preheated the oven to 400, lined and sprayed the muffin tins. In a large bowl, I added 1 cup rolled oats and 1/2 cup almond milk. It a separate bowl, I combined: 1/4 cup greek yogurt, 2 tbsp. honey, 2tbsp. oil, 1/3 cup brown sugar and 1 egg. Once combined I mixed with the oats and milk. Next was to add the dry ingredients: 3/4 cup flour, 1/2 tsp baking powder, 1 tsp. cinnamon, 1/4 baking soda, and 1/8 tsp. salt. After all was well combined, I folded in about 2-3 chopped apples. I divided the batter into the muffin tin. Sprinkled the top with raw sugar. Then baked for 5 minutes. Without opening the over, I changed the oven temperature to 375 and baked an additional 10-12 minutes, until the tops were golden brown.

They were on the healthier side and not too sweet. They were filling and paired very well with coffee. Using Greek yogurt in muffins has become my new favorite. I feel like a similar recipe but with kodiak pancake mix with be delicious as well. Stay tuned for more breakfast muffins – comment your suggestions below!
