Do you ever have this idea of “Oh I will make this for lunch!” but then you open your fridge, and you didn’t have all the you wanted? Because, same. I had the best intentions of making a fun and healthier lunch bowl, but I made do with what ingredients I had!
I started with the base. In my rice cooker I cooked 1 part quinoa and 1 part brown rice. I added some salt, pepper, garlic, turmeric, mustard powder and a bay leaf to give some flavor. I thought I had frozen broccoli to add, but it turned out to be cauliflower. I decided to add some to the cooker anyways! As that cooked, I had some roasted peppers I wanted to use to make a dressing. To my food processor, I added the peppers, EVOO, salt, pepper, garlic, green onion, lemon zest and juice from half a lemon. I blended until smooth. I then added a few scoops of Greek yogurt and blended again. Tasted it and seasoned accordingly. Last item to cook was the chicken burgers from Costco that is my newest obsession. They cook very nicely in the air fryer and they are cheesy and delicious.
The bowl assembly came together pretty easily. I started with the rice/quinoa base, then added chopped peppers, cucumbers, tomatoes, feta, the pepper dressing and then the chicken burger. It was a great summer meal prep. Not necessarily the flavor-ingredient combination I was going for, but it worked out. I found it to be filling and fueling at the same time! I think next time I will try to think of the idea before grocery shopping so I can have all the ingredients and flavors I had envision! If you have suggestions – comment below.
