Potato Salad

Summer foods are so much fun. The obstacle is when you really want something but don’t have all the ingredients. The potato salad craving hit with limited ingredients – but we made it work!

1 rustic potato was cut up very chunky and then boiled for about 10 minutes. During this I chopped up some celery, carrots, and green onions. All the ingredients I had on hand – but it worked. Then for a dressing, I mixed in mayo, yellow mustard, a dollop of Dijon mustard and seasoned with salt, pepper and garlic powder. There were no measurements, but I gave it taste and added more pepper. Once the potato was done, I drained it, and tossed it in the dressing. I let the salad cool a bit in the freezer/fridge so it wasn’t too warm when it came to be dinner time.

It was surprisingly easy to throw together last minute, but now I feel like there can be some fun with ingredients and make a different variety. Stay tuned and let me know your suggestions below!

  1. Sounds great! I always wanted to make a cook book and title it ‘Just a dumpy cookbook’ or a second version , ‘Just another dumpy cook book’. Or if it was really good, ‘ Not just another dumpy cook book’. And all the recipes would be , of course, just dump in this or that. The idea is yours, now, if you want to go with it! Lol
