Cinco de Mayo means fun foods like Elote aka street corn. (Clearly I am still behind here catching up LOL). I venture to make it myself and it turned out soooo perfect!
It was very easy as well. Cook the ears of corn as you normally would. In a shallow dish I mixed the following: 2 parts mayo, 1 part sour cream, grated cheddar jack cheese, lime zest, salt, pepper, chili powder, garlic powder, elote seasoning and lime juice until well combined. I tasted along the way and seasoned as needed. Lastly I mixed in chopped cilantro.
When the corn was done (with some butter all melted on) added skewers to make it easier to roll in the mayo mixture. I added more elote seasoning on top and some grated cheese (the cheddar and mozzarella I had). Popped it in the warm oven to it all melted into the corn on the cob. It was a delicious bite and very much street corn worthy! I would definitely make it again! I think next time get some cotija cheese to make it even more Mexican street worthy!
