Costco Chicken

I didn’t think I could have more ideas for ways to use a Costco chicken – but I keep surprising myself LOL. I had one recipe that was so delicious this last time around, I need to share it. We have some repeat recipes as it was soup season and it was easy through together meals lol.

  1. Arroz Caldo was made using the bones and thigh meat. It was pretty delicious, still a bit on the thicker side. However, it’s the perfect soup season comfort food for me!
  2. I bought the premade Caesar salad and used 1 breast meat to have several meals of chicken Caesar salad. It was a quick, easy and good enough meal prep for several meals throughout the week!
  3. I used the rest of the white meat to make lunches. I was looking to a Mediterranean style lunch bowl… but with what I had. Which turned out to be not all that I hoped I had LOL. However, my chicken quinoa bowls did turn out pretty delicious. I started by making quinoa. I added ½ cup quinoa and 1 cup water to a sauce pan. I then added about half a bag of frozen broccoli. I wanted to added a bit more green to the bowl, because I didn’t have pepper or cucumbers lol. I let the cook and seasoned with salt and pepper. I then added some minced garlic and asiago butter. After tasting it I added some white pepper and paprika. I made sure to chop up the broccoli when it was softer, so there weren’t large chunks. The asiago butter was the perfect add and really leveled up the quinoa. This mixture was my bowl base. I topped it with chopped purple onions, chopped chicken breast and cherry tomatoes. I also had some roasted yellow and red peppers I added as well. Lastly, I mixed together a Greek yogurt dressing for the bowl. I added some EVOO, salt, pepper, garlic powder and lemon juice to Greek yogurt. This became the perfect dressing that tied in all the ingredients for the perfect bowl. It had my mind going…so next chicken, we may look to do more bowls like this!
  4. I took the remaining dark meat to make a quick and very yummy Buffalo Chicken Mac and Cheese. I made my box Trader Joe’s white cheddar in a saucepan per package. I only added some shredded white cheddar, because there is no such thing as too much cheese. In a frying pan I added the chopped chicken wit hot sauce and blue cheese. I let it simmer and soak in some of that yummy flavor. I then mixed the chicken in with the mac and cheese. It was a delicious buffalo mac and cheese. Pair with some pieces of celery for the added freshness and crunch aspect it was the perfect meal! I will definitely be making this again as well as spark some other fun ways to dress up your box mac and cheese.
