Protein Blueberry Muffins

We are back with another delicious, healthier, protein breakfast snack! I love using the Kodiak pancake mix for something other than pancakes.

Preheat the oven to 350 and spray the muffin pan. In one bowl mix2 cups Kodiak mix, ½ cup brown sugar and 1 tsp cinnamon. Toss 1 cup fresh blueberries in about 1 tbsp of Kodiak mix. Then in another bowl whisk the wet ingredients together: 1 cup Greek yogurt, 1 egg, ¾ cup milk, vanilla and ¼ cup melted butter . Slowly combined the wet ingredients with he dry ones. Once all combined, fold in the blueberries. Add to muffin pan evenly in all cups. Bake for about 16-18 minutes until the toothpick comes out clean.

They came out a light brown color. They were light, yet filling and pretty delicious. I love the yogurt being added to this muffin and it will definitely be made again. Next time I may do more cinnamon or spice with raisins! Comment your ideas below!
