Costco Chicken Round 4

I thought I was running out of ideas my last how many ways can you use a Costco Chicken –  but here we go round 4. I will say I made the mistake of not pulling the chicken from the bones when I first bought it was it was nice and warm. It was much harder when it was cold from being in the fridge. So mental note for next time!

First up we have soup of course! We did the rice arroz caldo soup as we have in the past. No changes to the recipe and it was quite delicious! 

Next up was a quick little meal using my favorite Trader Joe squiggle noodles. After prepping the noodles per package, I chopped up some chicken breast, crisped the chicken skin and topped with everything but the bagel seasoning and fresh scallions. Another quick, easy and yummy meal!

The remaining chicken breast meat was used for chicken Caesar salad wraps. Another easy lunch prep meal. I shredded the chicken, a bit too much. Then I added Caesar dressing, shredded parmesan and cracked black pepper. I didn’t have lettuce at the time, so I used arugula – not as crunchy, but it was still delicious. I wrapped it all in a flour tortilla. I was light and refreshing. Next time I want to use lettuce, and keep the chicken chunkier! Let me know if you have any recommendations for the next time.

The dark meat of the chicken was first used for a chicken parm zucchini boat. First, preheat the oven to 400. I had one large zucchini that I cut in half and hollowed out. I placed this in a greased glass baking dish and seasoned them with some salt and pepper. For the filling, I mixed the diced chicken, with a small can of tomato sauce, salt, pepper and Italian seasoning. I filled each side of the zucchini with the filling. I popped them in the oven for about 20 minutes. Then I removed the dish, and topped the boats with sliced fresh mozzarella. Popped them back in the oven for another 10-15 minutes. I finished it off with a quick broil to get the cheese gooey and melted. I had this with a side of toasted sourdough bread it was a delicious treat. I think I used too big of a zucchini because I got sick of eating it for a week straight LOL. But definitely a recipe to repeat!

The remaining dark meat was used to make a chicken cheddar bacon potato bake. I started by preheating the oven to 375. Next was dicing potatoes and seasoning them with some EEVO, salt, pepper, garlic and paprika. I roasted them in a greased glass dish for about 25 minutes. I crisped some cooked bacon and added it to a bowl with the chopped chicken and cheddar cheese. After removing the potatoes, I added the chicken mixture and topped with some more cheddar cheese baking for another 15 minutes. It became a yummy and hearty dish. Topped with a little bit of ranch, it was the perfect balanced bite!

I didn’t think that we could come up with more ways to use a Costco chicken, but now I may want to make a game out of it. So let’s see what the next chicken brings to the kitchen!
