Prosciutto and Peaches

Peach season is one of my favorites times of year! After getting fresh peaches and delicious sourdough bread (from Costco), I needed to create the most delicious summer dish – here’s how it went.

I start by heating a pan with some zesty garlic EVOO. It garlicky with punch of hotness. I slice the sourdough bread – it has become my favorite bread from Costco. It fresh, delicious and only $5. (I haven’t been able to find it lately, but I am hoping after the in season cranberry walnut loaf is gone that it comes back LOL). I toast each side of the bread in the pan. Then I added sliced tomatoes with salt and pepper. Next was fresh mozzarella slices; followed by prosciutto. I finished it with fresh arugula, fresh peach slices and a strawberry balsamic glaze.  

I can’t even begin to describe how delicious it really was. I am now day dreaming about this as I type. It was so good, that the other peach I had, I made the same dish again. The peach, mozzarella and prosciutto may be my new favorite combination as well. Do you have a favorite peach dish or combination? Comment below!
